Can't go without answering you Cyndi. First of all I don't cook it, hubby the does it. But he cooks it slowly in a tomato based sauce with some carrots, celery, onion & garlic and a little spice. The trick is to get a tender type of tripe & cook it for awhile. It does smell the house out a bit!!

Everybody's leaving me again. And, it's way too many posts to the next TOPP (what number post would that be, Rola?), so I think I'll just go read my emails for a while. Seeya.

do you like tripe Cyndi? I used to hate it until I tasted it the way my hubby cooks it. I even ordered it in a restaurant when we went to France once - but it was horrible & I couldn't eat it.

Noone been by in so long? The Aussies are all out enjoying the weekend? Today is a lovely spring day in alabama, a cool start, sunny, with only a slight smell of the distant Florida Wildfire Smoke today.

Cyndi, I have not read the easy board front to back in several days, but did not see Wagdy Kamel in the pages I did read. Did you try leaving a message on his page to check up on him?

CYNDI, I did a bit of detective work, and am happy to report, there was a comment from Wagdy Kamel posted to Grannie Mo's page just an hour ago If my time conversions are correct. site time was 9:26 pm, Saturday May 26. So we can safely assume that he is able to move about and access his computer, and sounds his normal courteous self, so do not think you need worry about him. Hope this helps. Byee for now.

Cindi, do you eat chitterlings? They're on my avoid list, right above tripe. I'm glad to hear Wagdy is up and about. He hasn't been his effervescent self since his mother-in-law passed away. I hope time takes care of that for him. He's certainly a likable fellow.

WHAT's FOR LUNCH or DINNER TODAY?

I have made a Mexican soup for our lunch today. this one is fast and easy.

One can fat free chicken broth
One 16 oz can of black beans
One can of corn kernels
one can of diced tomatoes
(and all the extra tomato juice saved from recipes that said drain the tomatoes)
about a cup of cooked rice
( could sub instant rice to make one cup cooked)
Dried minced onion
black pepper, cumin and chili powder to taste

combine all but cooked rice in a soup pot, bring to boil, simmer Add cooked rice and continue to simmer till rice is warmed. Serve hot or even room temp as I do on these warmer spring days.



Serve with Rola's Savory muffins or cheese cornbread and a salad for a hearty lunch or a light dinner.

HI RUBY, did you sneak in while I was typing up that recipe? Good to see you, I did see your post over on EASY earlier.

I am like you, have never eaten either tripe or chitterlings and hope to keep it that way, but. . never say never. I supose if I got hungry enough and that was all available, I wold overcome my distaste quickly.

It is 90 degrees here as I post. Very short spring, then right into summer I see a few more comfy chairs are in evidence. Wimps! Not at all good for the posture
