Hello everyone!
Suzy - we use the Annette Sym books a lot - we like them because the food isn't too fancy, or too expensive, just ordinary things that most of our family will eat. When Rob cooks he always looks through those books first. In Book 1 there's a recipe for damper that sounds a lot like MizTricia's beer bread - it takes about 5 minutes to mix, then an hour to bake: couldn't be easier! I sometimes add some Italian herb mix to it - makes it very tasty.

Judy, did I say I did the Italian herb variation in my bread tonight? It was a big hit. Hubby said he would give up one of his beers anytime I wanted to make more.
I think I will try other variations, and make up a few myself. I am thinking cinnamon and raisins and some sweetener to make a breakfast bread for toasting and serving with cream cheese.
This recipe calls for baking powder, and my taste buds are very sensitive to that. First bite, I almost spit it out, yuck! But because it smelled so good, I warmed it and tried again. By the third bite it was tasting OK to me. I am wondering if I could reduce the amount of baking powder? I will look for other beer bread recipes and see if any do not use baking powder.
I will not eat cornbread at many restaurants because they add enough baking powder I can taste it. It is a terrible metallic aftertaste, does anyone else taste that?

MizTricia this recipe is VERY simple - uses 3 cups self-raising flour, 1 teaspoon each of sugar and salt, 1 egg white and 1 "stubby" of beer.(375mls) Mix with a wooden spoon, coat a loaf-tin with cooking spray, bake at 180C for 1 hour. Best eaten the same day. It's low-fat; I often spread it with low-fat Philadelphia cream cheese - don't know if you get that in America? If not, I'm sure there's something similar. Or low fat margerine, or butter, if that's what you like!

You can add whatever you like to this - garlic, herbs or spice - finely chopped capsicum is nice with the herbs. It's very versatile.

JUDY, almost my recipe, except I am making whole wheat bread, and you cannot get self rising whole wheat flour. My recipe was 1 1/2 cups each plain white flour and whole wheat flour, 1 tbs each baking powder and sugar, 1 1/2 tsp salt, a 12 oz beer plus 1/4 cup water ( water only needed for the whole wheat flour, not if using all white flour) Now if I used self rising flour for white, I could reduce the baking powder to 1 1/2 teaspoons, that should greatly improve the taste.
The leavening used in self rising flour is different from baking powder, and I do not get that metallic after taste from it. Heidi, sorry you get same taste, but happy someone besides me gets it. Al says I am just weird. Maybe so, but it still tastes bad heheh.
that one TBS of sugar does not make the bread sweet, it just helps the yeast in the beer rise more. OH, I did read in another recipe, the beer is better room temp, and if you mix the bread and then let it rise while oven is preheating, that helps it rise more. Mine rose nicely even with cold beer, was up over the top of the loaf pan.
Yes, Judy, we can get low fat Philly, and also a fat free version of cream cheese.
Why should you eat red meat 3 times a week? Perhaps an iron deficiency?

I like to soften their food in hot water (hot works faster than cold, and they get a tastier meal) to try to prevent bloat. That's also why I feed so late at night. Once I go to bed, so do the dogs. They are less prone to bloat if they rest after eating.
