We still have large drifts of snow and of course there are huge piles from plowing. Still...50s today and 60 tomorrow accompanied by 2" of rain with 60 mph wind gusts -- I think the old snow just might be be gone "just in time" for the next 2" of snow forecast for Wednesday night. Ground's still frozen, of course, so expect mushy mud and flooding of rivers and streams and anywhere ice has been blocking drainage outlets.

Regarding the "love Journey" it is from the movie FireProof -- I havn't watched it yet, waiting for it from my library. my Church is doing the 40 day challenge. enjoy your day, My son is off to Key West this month - oh, to be young and able to just kick up your heels and travel..

Debbie, Don't know what kind of lemon pie you had in mind, but I love lemon meringue pies. I hadn't had or made one in eons...well, quite a few long years. I recently had an extra pie crust and got my mouth set for lemon meringue pie. I bought a box of lemon pudding mix.. the kind you cook. I think it was "store brand"(generic). Fixed the pie filling by the directions on the box and also made the meringue by the directions on the pudding box. It was delish. I took it to a church dinner and got raves and even Mother in law told me it was really good. I found a crust recipe that is outstanding also. It includes an egg after you mix the flour,shortening and water. If you are interested, I will look it up and send to you.

Good to meet you! We don't have rhubarb here. Back around 1970, I spent some time in Minnesota. We had a rhubarb patch in the back yard of the old farm place where we lived. I learned to make rhubarb pie and loved it.
Here is the pie crust recipe. It is from a recipe book put together by the ladies at a Church of Christ in Nacogdoches, TX. 2 of my sons-in-law are from Nacogdoches and my daughters(their wives) went to college there. One daughter & family live there now.
This makes a lot of pie crust but it keeps well or I even freeze it.
Pie Crust
3 cups flour, sifted & measured
1 1/4 cups Crisco (veg.shortening)
1 1/4 tsp. salt
1/2 cup cold water (from icebox)
1 egg, beaten pretty good

Cut Crisco into flour (orig.note: I use slotted spoon) Add water. Mix up fairly well. Add your beaten egg to this mixture and continue to mix it into dough with spoon. Divide into amount of 3 crust and wrap in wax paper. Lay on shelf in icebox and will keep for several days if not needed immediately. You need to let dough get to room temperature before using.
Note: I don't know if "ice box" for refrigerator or fridge is an age thing or a southern thing. I know Emeril (Lagasse) uses it on his cooking shows. I am old enough to remember having an "ice box" which had a big block of ice to keep the food cool.

Thanks for your expressed appreciation. Everyone is so kind so I feel wanted here. It is one of those bad patches and the loss of the cat does hurt. Emma was a beaut cat-onality. Small, pretty, Main-Coon pedigree, feral - almost wild and used to romp with the local squirrels - indeed sometimes she appeared to think she WAS a squirrel. Still expected to appear but of course she doesn't. Sad
