I've been looking at the recipe - it is very long, but if you want it, here it is ...
Hummingbird Cake (Annette Sym's)
2 cups SR Flour
2 egg whites
1/3 cup sugar
1/2 cup apple sauce (from jar, no additives - I use IXL)
1 tsp bicarb. soda
1 tsp mixed spice
3/4 cup drained, crushed pineapple, in natural juice (from can)
1 cup mashed banana
1/4 cup (125g)chopped walnuts (I prefer pecans)
cooking spray
Preheat oven to 180C
Drain pineapple, keeping juice for icing.
Using electric beater, in a large mixing bowl beat egg whites and sugar for 1 minute.
Stir bi-carb. into apple sauce (it will froth), and add to bowl. Mix in mashed banana, walnuts (or pecans), drained pineapple and mixed spice. Blend ingredients together well.
Gently fold flour into mixture in one go. DO NOT BEAT, as this will make the cake tough.
Pour into a 19 cm round cake tin that has been coated with cooking spray. Bake 35-40 mins., or until firm to touch in centre.
Allow to sit in tin for 5 mins. before turning out onto wire rack.
Icing (optional)
1 cup icing sugar
2 teaspoons reduced fat margerine (Flora Light)
about 1 tbs of the saved pineapple juice.
When cake is cool blend icing ingredients in a small bowl until smooth. Spread over cake top.
In humid weather keep the cake refrigerated.

Judy - those Annette Sym cookbooks have some good low-fat recipes in them, don't they? My daughter and DIL swear by them. I only cook when I HAVE to!

OK Cyn, I have been slack and still need to sort out the spare bedroom and am in PANIC mode. Yes I am yelling.
For those on SA I am looking for salads and desserts, bring your own grog! Will be around all weekend Cyn and Mon and Wed. Teresa is coming with me on Sat to pick them up and we will be going "somewhere" to show them around. EEEEK! panic mode.

Hi Broni...I'm all stuffed up in the head at the moment...dust mite allergy...I have been attacking my 'boxes'...
I have been enthused by Junes activity and now yours..I'm trying to find my way into the lounge room...winter is coming and there is a heater in there... ALSO the Telstra technician is coming tomorrow and there is NO WAY anyone can near the 1st phone point in the house...
New resolution...stop shoving all the junk in there every time I clean up!!

Ok Broni - will work on a Salad and a dessert - that's what I expected but now will consult my food advisor (sister/gourmet cook) on what she thinks would be a good idea. I'm thinking Greek Salad and I found a really diabolical recipe for a raspberry cheesecake on - wait for it - a chocolate brownie base. Will check out whether I think I'm capable of doing that without messing up. I was thinking pavlova or lamingtons but neither are my forte and I expect they have probably tried them before.

Now the scary part, when they're on the road by themselves! Yikes! I still get nervous when Meghan takes the car out and she'll be 21 in 6 weeks and has been driving since she was 16. It's not just them and their inexperience you worry about, it's also the crazy drivers out there on the road! Boys seem to be much more natural driving than girls.

Angelina Jolie is filming her new movie "Salt" in Albany today. They are closing the road to where Jerry works from 8am to 4pm, so he'll be stuck. (It's the ramp into the Empire State Plaza where the state offices are.) I don't know if she'll be there. I'm debating whether to go down and see. It's not very often that a movie is filmed in the area.

MizT, only Ian will be coming with us. We'll be passing right by Brendan's college but it will be very early in the morning and his finals start next week, so I don't think he'll come. We'll stay overnight at my sister's house. Even though her house is full(D1 and her 3 kids, D3, her hubby and daughter, and S1 live there and D3 will be there for the weekend) we usually find a place to squeeze in. If S1 sleeps over his friend's house, we'll take his room. We'll come back on Sunday afternoon and stop by to visit Brendan on the way back.

Stella, I see forecast from 81 to 85 for the next 5 days, here. You say it is early for temps in the 80's up your way?
OH, that hummingbird cake sounds delish. Would make it now, but no bananas in the house, bummer. Thanks for the recipe. Is that just one layer cake pan from my set of 2? or is it a larger pan? Me and metric, cannot convert CM once you get past 10.
Congrats Rolanda, so happy you have one pair of shorts finished. OH MY, 3 at once? Each with 2 secret pockets? You will be the secret pocket expert after those!
Congrats to the new driver, the roads will never be the same again! Brenda, are you happy to have a new driver in the house? When my first got her license, She also got the job of running many local errands. She loved being seen out and about in an auto, and I loved not having to do them.
